Strawberry Lime Yogurt Loaf
A tender yogurt cake packed with strawberries and brightened with plenty of lime zest.

Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.

Whisk the flour, baking powder, and salt in a medium bowl.

In a larger bowl, rub the sugar and lime zest together with your fingers until fragrant, then whisk in the eggs, yogurt, oil, and vanilla.

Fold the dry ingredients into the wet mixture just until combined, then gently fold in the strawberries.

Scrape the batter into the loaf pan and smooth the top.

Bake for 45 to 50 minutes until golden and a tester inserted in the center comes out clean.
