Steps

  1. 1

If using wooden skewers, soak them in water for at least 15 minutes.

  2. 2

In a bowl, whisk together soy sauce, brown sugar, ketchup, ginger, garlic, oil, and salt.

  3. 3

Add the chicken and toss to coat. Thread the chicken and pineapple onto skewers.

  4. 4

Heat a grill pan, outdoor grill, or broiler to medium-high. Cook the skewers for 10 to 12 minutes, turning occasionally, until the chicken is cooked through and lightly charred.

  5. 5

Brush any remaining marinade over the skewers during the last couple of minutes of cooking so they turn glossy and sticky.

  6. 6

Finish with scallions and lime wedges if using, then serve hot.

Optional moves for when you want to impress.

  • Serve them over coconut rice with extra lime for a backyard-dinner situation.
  • Add a pinch of red pepper flakes or a little sriracha to the marinade if you want heat.
  • Thread pieces of red onion or bell pepper onto the skewers to make them more substantial.
  • Broil the cooked skewers for 1 extra minute if you want deeper caramelized edges.
