Divide the beef into 8 loosely packed balls.

Heat a cast iron skillet or griddle over high heat until very hot.

Lightly oil the surface, add 2 or 3 beef balls, and smash them flat immediately with a sturdy spatula.

Season with salt and pepper and cook for 2 minutes until deeply browned.

Flip, top each patty with cheese, and cook 1 more minute.

Stack two patties per bun and serve with onions, pickles, and sauce.
