Skillet Sausage and Peppers Gnocchi
Crisp-edged gnocchi, browned sausage, and sweet peppers all pulled together in one skillet.
Steps

Heat a large skillet over medium-high heat. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through. Transfer to a plate.

Add the olive oil, gnocchi, and a pinch of salt to the same skillet. Cook for 4 to 5 minutes, tossing occasionally, until the gnocchi are lightly crisped.

Add the peppers and onion and cook for 5 minutes until they start to soften and pick up some color.

Stir in the garlic, oregano, and red pepper flakes and cook for 30 seconds until fragrant.

Return the sausage to the skillet, pour in the broth or water, and toss everything together until glossy and warmed through.

Turn off the heat, stir in the parmesan, and season with black pepper and more salt if needed.

Finish with herbs if using and serve hot.

- Tear in a few handfuls of baby spinach at the end if you want to sneak some greens into the skillet.

- If your gnocchi are sticking, let them sit still for a minute longer before flipping so they can really brown.
