Steps

  1. 1

Heat a large skillet over medium-high heat. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through. Transfer to a plate.

  2. 2

Add the olive oil, gnocchi, and a pinch of salt to the same skillet. Cook for 4 to 5 minutes, tossing occasionally, until the gnocchi are lightly crisped.

  3. 3

Add the peppers and onion and cook for 5 minutes until they start to soften and pick up some color.

  4. 4

Stir in the garlic, oregano, and red pepper flakes and cook for 30 seconds until fragrant.

  5. 5

Return the sausage to the skillet, pour in the broth or water, and toss everything together until glossy and warmed through.

  6. 6

Turn off the heat, stir in the parmesan, and season with black pepper and more salt if needed.

  7. 7

Finish with herbs if using and serve hot.

Make it fancy

Kick it up a notch

Optional moves for when you want to impress.

  • Use hot Italian sausage if you want the peppers and onions to have a little more swagger.
  • Tear in a few handfuls of baby spinach at the end if you want to sneak some greens into the skillet.
  • A spoonful of ricotta on top makes the whole bowl feel softer and a little more restaurant-y.
  • If your gnocchi are sticking, let them sit still for a minute longer before flipping so they can really brown.
