Preheat oven to 375°F (190°C). Lightly butter a small baking dish.

In the baking dish, toss the sliced peaches with 2 tablespoons brown sugar, lemon juice, and cinnamon.

In a medium bowl, combine the oats, flour, 1/3 cup brown sugar, and salt.

Add the cold butter and work it into the oat mixture with your fingertips until clumpy.

Scatter the topping evenly over the peaches.

Bake for 30-35 minutes until the fruit is bubbling and the topping is golden brown.

Let cool for at least 10 minutes before serving.

Optional moves for when you want to impress.
- Add a handful of chopped pecans or almonds to the topping for extra crunch.
- Roast the peaches alone for 10 minutes before topping if they are especially firm.
- Serve warm with vanilla ice cream, crème fraîche, or softly whipped cream.
- Swap in a pinch of ground cardamom with the cinnamon for a more floral finish.
