Plum Almond Skillet Cake

Preheat oven to 350°F (175°C). Butter a 9-inch oven-safe skillet or cake pan.

Beat the butter and 3/4 cup sugar until light and fluffy, then beat in the eggs and vanilla.

Whisk the all-purpose flour, almond flour, baking powder, and salt in a separate bowl.

Fold the dry ingredients into the butter mixture just until no dry streaks remain.

Spread the batter into the skillet and arrange the plum wedges over the top.

Sprinkle with the remaining tablespoon of sugar and bake for 35 to 40 minutes until golden and set in the center.

Cool for at least 15 minutes before slicing and serving.
