- 1
Preheat oven to 425°F (220°C). Line a baking sheet or small roasting pan with parchment paper.
- 2
In a small bowl, whisk together the miso paste, soy sauce, maple syrup, rice vinegar, and sesame oil until smooth.
- 3
Pat the salmon fillets dry and place them skin-side down on the prepared pan.
- 4
Spoon the glaze evenly over the salmon, spreading it into a thin layer.
- 5
Roast for 10-12 minutes, depending on thickness, until the salmon flakes easily and the glaze is lightly caramelized.
- 6
Rest for 2 minutes, then scatter sliced scallion over the top and serve.

Optional moves for when you want to impress.
- Broil for the final 1-2 minutes to get glossy, lightly blistered edges on the glaze.
- Marinate the salmon in half the glaze for 30 minutes before roasting for deeper flavor penetration.
- Serve over steamed rice with quick-smacked cucumbers dressed in rice vinegar and sesame seeds.
- Finish with a few drops of chili crisp or a pinch of shichimi togarashi for heat.
