Steps

  1. 1

Preheat oven to 425°F (220°C). Line a small sheet pan or baking dish with parchment paper.

  2. 2

Pat the pork dry and rub it all over with the olive oil, salt, and black pepper.

  3. 3

In a small bowl, stir together the dijon, maple syrup, apple cider vinegar, and garlic.

  4. 4

Set the pork on the prepared pan and brush half the glaze over the top and sides.

  5. 5

Roast for 18 to 22 minutes, brushing with the remaining glaze halfway through, until the center reaches 145°F.

  6. 6

Rest the pork for 5 to 10 minutes before slicing.

  7. 7

Scatter parsley over the sliced pork if using and serve warm.

Optional moves for when you want to impress.

  • Serve it with roasted apples or sweet potatoes if you want the maple note to lean a little cozier.
  • Stir a spoonful of whole grain mustard into the glaze for more texture and bite.
  • Save the resting juices and spoon them over the sliced pork right before serving.
  • Slice it thin for sandwiches the next day with arugula and sharp cheddar.
