Preheat oven to 425°F (220°C). Line a small sheet pan or baking dish with parchment paper.

Pat the pork dry and rub it all over with the olive oil, salt, and black pepper.

In a small bowl, stir together the dijon, maple syrup, apple cider vinegar, and garlic.

Set the pork on the prepared pan and brush half the glaze over the top and sides.

Roast for 18 to 22 minutes, brushing with the remaining glaze halfway through, until the center reaches 145°F.

Rest the pork for 5 to 10 minutes before slicing.

Scatter parsley over the sliced pork if using and serve warm.
