Crispy Sesame Cabbage Rice

    Heat 1 tablespoon neutral oil in a large nonstick or well-seasoned skillet over medium-high heat.

    Add the cabbage and half the scallions and cook for 4 to 5 minutes until the cabbage softens and picks up some color.

    Stir in the garlic and ginger and cook for 30 seconds, then transfer the mixture to a bowl.

    Add the remaining oil to the skillet, spread the rice into an even layer, and let it cook undisturbed for 4 to 5 minutes so the bottom gets crisp.

    Whisk together the soy sauce, rice vinegar, sesame oil, and sugar or honey. Add the cabbage mixture back to the skillet and drizzle in the sauce.

    Toss everything together, then finish with the remaining scallions, sesame seeds, and chili crisp if using.
