Crispy Halloumi Couscous Bowls
Toasty couscous, cucumbers, herbs, and golden halloumi with a lemony pan sauce over everything.

Place the couscous in a heatproof bowl, pour over the boiling water or broth, cover, and let stand for 10 minutes.

Meanwhile, heat a drizzle of olive oil in a nonstick or cast iron skillet over medium heat.

Cook the halloumi for 2 to 3 minutes per side until deeply golden.

Fluff the couscous with a fork, then toss with the cucumber, parsley, dill, lemon juice, olive oil, and black pepper.

Divide the couscous among bowls and top with the warm halloumi slices.

Spoon any lemony pan drippings over the top and serve right away.
