Steps

  1. 1

Place the couscous in a heatproof bowl, pour over the boiling water or broth, cover, and let stand for 10 minutes.

  2. 2

Meanwhile, heat a drizzle of olive oil in a nonstick or cast iron skillet over medium heat.

  3. 3

Cook the halloumi for 2 to 3 minutes per side until deeply golden.

  4. 4

Fluff the couscous with a fork, then toss with the cucumber, parsley, dill, lemon juice, olive oil, and black pepper.

  5. 5

Divide the couscous among bowls and top with the warm halloumi slices.

  6. 6

Spoon any lemony pan drippings over the top and serve right away.

Optional moves for when you want to impress.

  • Add torn mint and a few thin slices of red onion for more crunch and sharpness.
  • Scatter toasted pistachios over the bowls for color and texture.
  • Tuck in a spoonful of hummus or thick yogurt underneath the couscous.
  • Swap the dill for basil and add cherry tomatoes when you want a more summery version.
