Cinnamon Maple Pear Baked Oatmeal

    Preheat oven to 375°F (190°C). Lightly butter an 8-inch square baking dish.

    In a large bowl, stir together the oats, baking powder, cinnamon, and salt.

    Add the diced pears and toss so they are coated in the oat mixture.

    In a second bowl, whisk the eggs, milk, maple syrup, melted butter or coconut oil, and vanilla.

    Pour the wet mixture into the dry ingredients and stir well, then scrape everything into the prepared baking dish.

    Top with chopped pecans if using and bake for 30 to 35 minutes until the center is set and the edges are lightly golden.
