Steps
- 1
Preheat oven to 425°F (220°C). Toss the broccoli with 1 tablespoon olive oil, salt, and black pepper on a sheet pan.
- 2
Roast for 15 to 18 minutes until the edges are dark and the florets are tender.
- 3
Meanwhile, mash the white beans with the remaining olive oil, lemon juice, and grated garlic until mostly smooth.
- 4
Toast the bread lightly so it can hold the toppings without going soft.
- 5
Spread the bean mixture over the toast, pile on the roasted broccoli, and top with the cheese.
- 6
Broil for 2 to 3 minutes until the cheese is melted and bubbling, then serve hot.

Optional moves for when you want to impress.
- Finish with thin lemon zest and a pinch of red pepper flakes for extra lift.
- Rub the toast with a cut garlic clove before adding the bean spread if you want it punchier.
- Use torn mozzarella plus parmesan for a stretchier, more golden top.
- Scatter chopped toasted walnuts over the melts right before serving for crunch.
